Piedmonte is surrounded by the Alps and famed all over the world for it’s cuisine -butter, rich egg pastas, braised meats, and cheeses and of course, white truffles. We will be taking a trip a few days before this evening to Asti where the finest truffles in the world are found, we will bring some back especially for this occasion. The evening will be hosted by our friend Norbert Riesnich of the Braida cantina who produce some of the finest wines in Italy together with sommelier Tim McLaughlin-Green of Sommelier's Choice. This is a very special and unique evening where our guests can enjoy one of the finest delicacies in the world with wines to match.

I fell in love with the food of Sicily. The seafood there is some of the best I have eaten anywhere in the world and the wines of the island are unique in flavour due to the volcanic nature of the soil and we will have a small selection of the most regarded for especially for the evening. This will be an evening for the seafood lover and the menu will include fresh sea urchins or “rici di mare”,as they are known and other famous seafood and pasta dishes of the island.

Now summer is here it’s time for bottles & magnums of light rosé from the Riviera. Bouilabaise is the most famous seafood dish of the coast towns. Enjoy baskets of wonderful crudités, steamed artichokes and grilled scallops. The main event will be Bouiilabaise served in the traditional style. The fish is first cooked in a rich broth which is served first and the fish then filleted at the table and served with aioli and potatoes. Bouilabaise is a wonderful experience.

We love the Balaerics, the food is unique and the preparation of seafood there is wonderful. The menu this evening will feature typical dishes of the islands including the famous lobster calderetta cooked by the fishermen in the North of the island of Menorca. We will prepare this wonderful dish using our local lobster which will be simmered slowly in claypots over charcoal where it develops the most wonderful flavour of the sea.

Tuscany is Italy’s food capital with it’s wonderful seafood and fantastic meats, this evening we will enjoy both using the best of our local seafood. The beef or “Bistecca” in Florence, for me, is one of the finest pieces of meat I have ever eaten. We will use the finest aged meat  and will use the larger thick “T” bone cut  The meat they will be prepared in the traditional style - roasted over the fire and served with Tuscan olive oil, rosemary and sea salt. The evening will be hosted by Michelle Satta one of Tuscany’s rising star’s and producer of the some of the finest wines in Bolgheri.
